Periwinkles are subtly sweet and plump with a meaty texture similar to oysters or clams. These petite little gems are housed in swirling shells and require a little bit of work to withdraw the meat, but they are well worth it! The process is similar to working the nut out of a pistachio shell, and made a little easier with a toothpick.

Before cooking, soak your periwinkles in salted water in the fridge for a few hours, changing the water a couple of times. Then rinse thoroughly under cold water to clean off any remaining sand or grit.
How to cook your periwinkles: boil in water with a little salt for about seven minutes. Serve with melted butter for dipping.
