As the name suggests, the Lesser Amberjack has an amber-colored band from head to tail. Less assertive in flavor than the “Greater” variety, you’ll find its meat is pink with large flakes that are mild and rather sweet. If you like Swordfish, you’ll love this fish.
Bake, broil, fry, grill or sauté whole Lesser Amberjack with lemon, oregano and other simple seasonings. Sauté or broil fillets with similar seasonings. Cleaner flavors compliment this fish and let the mild flavor shine through.
