Hawaiian kanpachi, part of the yellowtail fish family, are raised in the deep blue waters off the coast of Kona, Hawaii. Hawaiian kanpachi has a subtly sweet taste with a firm texture, with pink flesh that turns white once cooked. Our whole Hawaiian kanpachi is harvested to order, assuring its peak freshness and flavor.

  • Hawaiian kanpachi are part of the yellowtail family.
  • Hawaiian kanpachi are the only ocean grown kanpachi in the USA, raised without antibiotics or hormones, and are fed non-GMO feed in the waters off the Hawaiian Islands.
  • Hawaiian Kanpachi habitats are monitored to ensure their carrying capacity is never exceeding that of the surrounding waters.
  • Hawaiian kanpachi are responsibly sourced off the Big Island of Hawaii, where environmental monitoring is consistently conducted through partnerships with the State of Hawaii.
  • Ocean samples are taken regularly at Blue Ocean Mariculture to make sure their Hawaiian kanpachi farms are not changing the nature of the naturally-occuring animal populations found in the Hawaiin oceans..
  • Blue Ocean Mariculture passed the Aquaculture Stewardship Council audit for farming kanpachi.

How to Prepare

Whole Hawaiian kanpachi fish is delicious cooked or prepared as poke or crudo. When cooked, the kanpachi has large flakes, while the high fat content melts in your mouth wonderfully in a traditional Hawaiian poke recipe .

We love roasting whole Hawaiian kanpachi in ginger, oyster sauce, and soy sauce, or breaking it down to serve as a zesty crudo with lime and radish.

Product Questions

There is no official, regulated standard for the terms sushi grade and sashimi grade. According to the FDA, superfreezing seafood in a commercial sub-zero storage freezer helps ensure parasites are destroyed, and that is required for many species of seafood to be consumed raw. However, the FDA Food Code exempts aquaculture (including Kampachi) from the superfreezing requirement. To learn more about the general considerations when choosing raw seafood, please visit the "Sushi and Sashimi" tab of our FAQ page.
