Razor, or jackknife, clams are soft shell clams that have a firm texture and a sweet briny ocean flavor. They have a long, thin, delicate shell. The overall shape bears a strong resemblance to an old-fashioned straight razor which gives them their name. If you like hard shell clams like cherrystone or littleneck clams, you will love razor clams. They have a sweeter and more delicate flavor.

- To clean, or purge the clams of sand and sediment, we recommend soaking clams in salted water in the fridge for 30 minutes before cooking.
