- Four 7-9 oz tilapia fillets, patted dry with paper towels
- Ground pepper, to taste
- Salt, to taste
- Cooking spray
- 1 cup all-purpose flour
- 2 eggs
- 2 tablespoons water
- 1 cup panko bread crumbs
- In the first shallow bowl, whisk together the flour and pepper. In a second shallow bowl, beat the eggs and water. In a third shallow bowl, combine the panko bread crumbs with ½ teaspoon salt.
- Cut each fillet into two long strips, then with each strip, dredge in the flour mixture, then dip in the egg mixture, then immerse in the panko-salt mixture. Place coated tilapia onto a plate, then spray liberally with cooking spray in addition to the Air Fryer’s basket.
- Spread the tilapia in the basket of the Air Fryer in a single layer, then cook at 375°F for 10 to 12 minutes, flipping midway through cooking. Serve with fries.
