Lobster Avocado Toast Recipe

This lobster avocado toast recipe pairs creamy avocado with crunchy toast to perfectly complement steamed lobster.

Ingredients


  • 2 ripe medium avocados, halved and pitted

  • 2 teaspoons fresh lemon juice

  • finely ground sea salt


  • 4 slices crusty bread of your choice

  • 4 ounces lobster, steamed and coarsely chopped

  • 2 teaspoons chives, finely chopped


  • extra virgin olive oil

Directions

  1. Scoop the avocado into the small bowl. Add the lemon juice and a pinch of salt. Mash until smooth. Set aside.
  2. Toast the bread in a toaster.
  3. Top each piece of toast with a thick layer of the avocado mash, followed by the lobster. Sprinkle with chives and drizzle with olive oil.

  4. Serve right away. Enjoy!
