Tomato Soup with Crab Recipe

Is there anything better than a big bowl of warm tomato soup on a cold day?    Well, this is a significant upgrade with the addition of our fresh Jumbo Lump Crabmeat and a little spice!    You won’t reach for that can again after making our easy Tomato Soup with Crab recipe.

Ingredients


  • 2 Tablespoons olive oil

  • 2 shallots, finely chopped

  • 2 cloves garlic, finely chopped

  • ½ teaspoon paprika

  • ½ teaspoon chili powder

  • ¼ teaspoon crushed red pepper, plus extra to serve, optional

  • 1 pound mixed cherry tomatoes , e.g., red and gold, halved

  • 1 cup canned crushed tomatoes

  • 6 cups chicken or vegetable broth

  • 1 pound fresh jumbo lump crabmeat, picked over for shell and cartilage, divided

  • 2 limes, 1 juiced, 1 cut into wedges

  • kosher salt

  • freshly ground black pepper

Directions

  1. Heat the oil in a large saucepan set over medium heat until hot.
  2. Add the shallots, garlic, and a pinch of salt, sweating until softened, 4-5 minutes.
  3. Stir in the spices and cook until fragrant, stirring frequently, about 1 minute. Stir in the cherry tomatoes, crushed tomatoes, and broth; bring to a boil and then reduce to a simmer.
  4. Once simmering, cook until the tomatoes are just soft to the tip of a knife, stirring occasionally, 15-20 minutes.
  5. When ready, stir in about half the crabmeat, the lime juice, and some salt and pepper to taste.
  6. Divide between bowls and top with the remaining crabmeat. Garnish with lime wedges and more crushed red pepper, if desired.
