Low Carb Baked Cod Recipe

Our fresh cod is baked in the oven with a flavorful crispy topping of breadcrumbs, herbs, and lemon. This recipe can be made with other white fish, such as haddock or halibut. Serve alongside fresh steamed broccoli for an easy midweek meal your whole family will enjoy!
- 2 cups cherry tomatoes, halved
- 2 red bell peppers, cored, seeded, and sliced
- ½ cup pitted green olives, sliced
- 4 Tablespoons olive oil, divided
4 fresh cod portions
- ⅓ cup fresh parsley, chopped
- kosher salt
- freshly ground black pepper
Preheat the oven to 375°F.
In an oval baking dish, toss together the tomatoes, peppers, olives, 2 tablespoons oil, and some salt and pepper to taste.
Sit the fish fillets on top; drizzle with the remaining 2 tablespoons oil and season with salt and pepper.
Bake until the fish is opaque, firm to the touch, and just starting to flake, 12-15 minutes.
Remove from the oven and let stand briefly before serving with a garnish of chopped parsley.
