WHAT IS CAVIAR?

Caviar traditionally refers to fish roe (eggs) that are harvested from the sturgeon, a large fish that is native to the Caspian and the Black Sea. However, caviar can also be sourced from other fish, including salmontrout, and paddlefish.

Caviar comes in several grades based on color, texture, and size of eggs. The most expensive caviar sold in stores is caviar from sevruga or beluga sturgeons. These two types of caviar contain the largest eggs, although they must be harvested at exactly the right time to get the best flavor and texture.
