Light and full of flavor, this Halibut Soba Noodle Salad recipe is a perfect fusion of golden pan-seared fish and a refreshing Asian-inspired noodle salad. With crisp vegetables, a savory-sweet dressing, and a touch of heat, it’s a balanced meal that’s both satisfying and simple. Ideal for lunch or dinner, this dish will quickly become a family favorite!
Salt and pepper, to taste
1 Tbsp sesame oil
4 oz soba noodles
1 Tbsp honey
1 clove garlic, minced
1 Tbsp rice vinegar
1 Tbsp soy sauce
1 Tbsp sesame oil
2 green onions, diced
1 small carrot, grated
½ cup shelled edamame
1 Tbsp chopped cilantro (optional)
Diced red chili, for garnish
Pat the halibut portions dry and season with salt and pepper. Set aside.
Boil soba noodles according to package instructions. Drain and rinse under cold water to chill.
Heat sesame oil in a pan over medium heat. Add halibut and sear for 3–4 minutes per side, or until golden and cooked through. Remove from the pan and let rest.
In a large bowl, whisk together honey, minced garlic, rice vinegar, soy sauce, and sesame oil.
Add green onion, grated carrot, edamame, and cilantro to the bowl. Toss in chilled soba noodles and mix well to coat.
Plate the soba salad, top with halibut portions, and garnish with diced red chili for heat and color.
