

Dover sole is a mainstay of European cuisine, prized for its pure white flesh, smooth, delicate flavor and very firm texture. You’ll often find it on the menus of the world’s best restaurants, where top chefs treat it simply, either baking or broiling and serving whole, or filleted at the table. Since it has few bones, the whole family will enjoy our sustainable dover sole at home.
Our dover sole is farmed in Iceland in an above ground recirculation system. The fish are raised from hatchlings and fed a special diet depending on their stage of development. Dover sole is a bottom fish but these fish are not raised like that, so there is no chance of high mercury levels with these fish.
