In a shallow dish or bowl, whisk together the Fulton Fish Market Sesame Ginger Marinade and chili pepper.
Add the char fillets, turning to coat in the marinade. Cover and chill for 1 hour.
After chilling, preheat the oven to 425°F. Remove the char fillets from the marinade and arrange them on a rimmed baking sheet lined with aluminum foil (reserve the marinade). Season each fillet with a little salt and pepper.
Roast the char fillets until opaque and starting to flake, 12-15 minutes.
Meanwhile, pour the reserved marinade into a small saucepan; add the vinegar and ⅓ cup water. Bring to a boil over high heat.
Once boiling, reduce to a gentle simmer, cooking until slightly thickened, 3-4 minutes; skim away any scum that rises to the surface. Cover and set off the heat.
When ready, remove the char fillets from the oven. Divide between bowls and spoon over the marinade sauce.
Garnish with a sprinkle of sesame seeds, some cilantro, and a squeeze of lime.
