Directions
Prep the sheet pan
Preheat the oven to 425°F
On a large sheet pan, toss broccoli, bell pepper, snap peas, and lentils with sesame oil, soy sauce, rice vinegar, ginger, garlic powder, salt, and pepper.
Spread into an even layer.
Roast
Roast for 18–20 minutes, tossing once, until vegetables are crisp-tender and lightly caramelized.
Sear the Ahi
Pat ahi steaks dry and season lightly with salt and pepper.
Press sesame seeds onto all sides of the fish to create an even crust.
Heat neutral oil in a skillet over high heat until it shimmers. Sear the ahi 1–2 minutes per side for a rare center and a toasted sesame exterior.
Let rest briefly, then slice against the grain.
Serve
Divide the roasted sesame vegetables and lentils among plates.
Top with sliced ahi, scallions, avocado, sesame seeds, and extra soy sauce or chili crisp if desired.
