Set the poacher diagonally over the stove so it is over two burners.
Place all the ingredients for the bouillon into the fish poacher.
Add water until the fish poacher is about ⅗th full.
Simmer for 30 minutes.
Lower the Arctic Char into the bouillon, simmer for 15-20 minutes.
Remove Arctic Char and vegetables from liquid.
Combine fish and vegetables and top with sliced lemons and a hollandaise sauce.
