Sole Meunière is an exquisite French classic, celebrated for its

Ingredients
¼ cup all-purpose flour
4 dover sole fillets, patted dry
salt and pepper, to taste
4 Tablespoons clarified butter, divided
2 Tablespoons minced parsley
1 lemon, cut into wedges, for serving
Directions
Season both sides of
sole with salt and pepper.
Place flour in a
shallow bowl or plate.
Dredge each fillet
in flour. Shake each fillet to remove excess flour.
Heat 2 Tablespoons of butter in a large pan over medium-high heat until bubbling.
Working in batches,
place fillets in the pan for about 2-3 minutes per side until cooked.
Wipe the pan clean,
add the remaining butter, and heat until melted and bubbling.
Pour the melted
butter over fillets and top with parsley.
