1 cup all-purpose flour
ground pepper, to taste
2 eggs
2 Tablespoons water
1 cup panko breadcrumbs
½ teaspoon salt
4 x 7-9 ounce tilapia fillets

In a shallow bowl, whisk together the flour and pepper. In a second shallow bowl, beat the eggs and water. In a third shallow bowl, combine the panko breadcrumbs with ½ teaspoon salt.
Pat tilapia fillets dry with paper towel, then cut each fillet into two long strips.
Dredge each strip in the flour mixture, then dip in the egg mixture, then immerse in the panko-salt mixture.
Place coated tilapia onto a plate and spray liberally with cooking spray in addition to the air fryer’s basket.
Spread the tilapia in the basket of the air fryer in a single layer, then cook at 375°F for 10 to 12 minutes, flipping midway through cooking. Serve with fries.
