2 Alaska Wild Salmon Portions
½ celeriac
1 Tablespoon butter
Approximately 20 chestnuts for the filling and 13 for decoration
3 Tablespoons olive oil
In the meantime, peel and finely chop the shallot. In a plate, mash about twenty chestnuts and add half of the shallot and the 2 Tablespoons of olive oil. Mix everything together.
Preheat the oven to 350°F. Cut the fish lengthwise. Put the stuffing inside and close it. Place stuffed portions in a baking dish. Arrange the remaining chestnuts all around. Pour a Tablespoon of olive oil, the second half of the shallot and the dill over the salmon and season with pepper. Bake for 10 minutes.
