This oven-baked cod recipe is a twist on a British classic, still crispy and delicious but without the deep frying. This healthy recipe uses our fresh Atlantic cod portions, breadcrumbs, and fresh lemon zest to create that crispy satisfying crunch without any oil. This easy cod recipe is a great way to introduce fish into your weekly menu, and keep even the pickiest eaters happy.
Ingredients
2 cups breadcrumbs
½ cup fresh parsley, chopped

1 lemon, zested and cut into wedges
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

4 fresh Atlantic cod portions
4 Tablespoons mayonnaise
tartar sauce, to serve, optional
Directions
Preheat the oven to 375°F.
In a mixing bowl, stir together the breadcrumbs, parsley, lemon zest, ½ teaspoon salt, and ¼ teaspoon black pepper.
Place the cod portions on a baking sheet; spread each portion with 1 Tablespoon mayonnaise. Top with the breadcrumbs, packing them down on the portions to coat.
Bake until the fish is firm and starting to flake, about 15 minutes. Remove from the oven.
To serve, divide the cod and lemon wedges between plates. Serve with tartar sauce on the side, if desired.
