These whole anchovies are nothing like the jarred anchovies you probably have in your pantry. Similar to mackerel, these omega 3-packed fish are meaty and made for grilling. Grilling anchovies is one of our favorite preparations for these small, oily fish, and if you’ve ever wondered how to grill anchovies, you’ve come to the right place. The char of the grill crisps up the skin and compliments the rich flesh. Don’t forget the lemon!
3 Tablespoons olive oil
salt and pepper to taste
lemon wedges, to serve
Heat the grill to medium.
Rinse anchovies in cold water and pat dry with paper towels. You can keep the head on or cut off. Toss anchovies in olive oil and season with salt and pepper.
Place anchovies on the grill, cover and grill for 3-4 minutes, then flip and cook for another 3-4 minutes until lightly charred with grill marks.
Remove and serve with lemon wedges
