Razor, or Jackknife, clams are soft shell clams that have a firm texture and a sweet briny ocean flavor.  They are usually 4-6 inches in length and have a long, thin, delicate shell.  The overall shape bears a strong resemblance to an old-fashioned straight razor which gives them their name.  If you like hardshell clams like Cherrystone or Littlenecks, you will love razor clams. They have a sweeter and more delicate flavor.

  • Our Razor clams are harvested along the Atlantic coast.
  • Razor clam stocks are not depleted and are not experiencing overfishing.
  • Razor clams are excellent when served raw.
  • To clean, or purge the clams of sand and sediment, we recommend soaking clams in salted water in the fridge for 30 minutes before cooking.

  • MIT adapted the razor clam's digging method for use in keeping undersea cables anchored securely.
