Bonito del Norte, or albacore white tuna, from the Cantabrian Sea in the Basque region of Spain, is a true connoisseur's delight, considered the most prestigious of Olasagasti's fine preserved seafood. Each fish is caught one by one using a fishing rod, prepared by hand with care by the arrantzales (Basque fishermen) in the cold, wild sea where the best bonito live. With its steep waves, it is the perfect breeding ground for the tuna, giving them unparalleled flavor and texture. The bonito is fried in olive oil and then cooked, never losing its exquisite flavor, tenderness or light pink color. Compared to regular tuna this white tuna has a non-fishy taste, making it ideal for those new to conservas.
