Invite the family over to feast on this delicious Cajun Crawfish Boil! In this easy recipe, our fresh crawfish is combined with our homemade seafood boil seasoning, potatoes, corn on the cob, and smoked sausage. Boil everything in the largest pot you have and let your family dig in, just don’t forget the napkins! You can buy a pre-mixed package or make your own seafood boil seasoning with the ingredients listed.
Ingredients
¼ cup pickling spices
¼ cup sea salt
2 Tablespoons mustard seeds; ground
2 Tablespoons whole black peppercorns; ground
2 Tablespoons crushed red pepper flakes
1 Tablespoon paprika
1 Tablespoon celery seeds; ground
1 Tablespoon dried chives
2 teaspoons ground ginger
2 teaspoons dried oregano
4 bay leaves
12 cups water
1 cup seafood boil seasoning
1 head garlic, split in half horizontally
1 pound Andouille sausage, sliced
4 corn-on-the-cob, husk and silk removed, cobs cut in half
3 pounds fresh crawfish
1 lemon, juiced
kosher salt
freshly ground black pepper

Directions
Bring the water to a boil in a large pot. Once boiling, whisk in the seafood boil seasoning. (You can buy a pre-mixed package or make your own).
Return the water to a rapid simmer and add the garlic, sausage, and corn. Return to a simmer, cover with a lid, and cook until the corn is just tender, 8-10 minutes
Add the crawfish and lemon juice, stirring to combine. Cover and simmer until the crawfish turn bright red, 5-7 minutes.
When ready, season to taste with salt and pepper as needed; if the seafood boil is too salty, add water by the cup until you reach your desired seasoning level.
