A simple recipe when you need something quick, healthy, and delicious! Herbs, lemon, garlic and olive oil come together as the perfect marinade before you pan-sear your fish. This recipe calls for salmon, but is versatile enough to complement almost every type of fish!
Start by seasoning the salmon portions on both sides with 1 teaspoon kosher salt and ½ teaspoon black pepper. In a medium bowl, whisk together olive oil, lemon zest, lemon juice, basil, parsley, rosemary, minced garlic, honey, salt, and pepper to create the marinade. Add the seasoned salmon portions to this marinade, skin side up, ensuring they are well-coated. Let them marinate for about 15-30 minutes in the refrigerator.
Heat a non-stick skillet over high heat and add a bit of olive oil to coat the pan. Once the skillet is hot, place the marinated salmon portions in it, skin-side down. Cook for about 5-6 minutes, then flip the portions over and cook for an additional 1-2 minutes, or until the salmon reaches your desired level of doneness.
Once cooked, garnish the salmon with fresh herbs and serve.
