

Shad Roe is a delicious delicacy that is the actual egg sac set of the female shad filled with thousands of eggs. Shad caviar, if you will.
Shad roe has a luxurious taste - akin to herring and foie gras. There is nothing else quite like it. The roe has a bright orange color and a rich, slightly sweet nutty flavor (not intense like caviar). Out of all the roe in the fish business, with the possible exception of caviar to some minds, shad roe is considered the most delicious.
Fresh Shad Roe is very delicate, so be sure to cook on medium-low heat, too high a heat, or nicking the sac, will cause the egg sac to pop.
