Not a true Perch, but a member of the Rockfish family, the Ocean Perch is noted for its beautiful pink-red skin that is edible, thanks to its high oil content. The meat is white and moist, with a delicate, slightly sweet flavor like Snapper and Orange Roughy.
Ocean Perch grow slowly and do not reproduce until relatively late in life.
Bake, fry, poach, sauté, or steam ocean perch with moderately assertive spices, herbs, and sauces. The firm texture of the perch also makes it a great fish for soups, chowders, and stews.
