The cuttlefish, sometimes called sepia fish, is in the same family as squid. They have a tender, meaty, somewhat chewy texture and mild flavor, that can be described as a cross between octopus and squid. Cuttlefish very easily pick up other flavors making them well suited for marinades. The quick-cooking high heat methods of grilling, sautéing, or deep frying are best as cuttlefish can become tough if overcooked.
